Stuffed Chicken

The past couple days have been leftovers for dinner but I wanted to share a delicious meal we had late last week.
Phil has always taught me that there is no right or wrong in cooking and one of the best things about cooking is creating.
Times before we have stuffed chicken breast with spinach and goat cheese but this time we did not have too much goat cheese left so I added the equal amount of plain cream cheese as well. Now comes the creative part. Start looking around your kitchen for things you think will mix together well. I ended up with olives, sun dried tomatoes and fresh cut basil. Mix it all together.


To make this chicken even more special I let it marinade in freshly squeezed lemon juice, orange juice, and chopped garlic.
When you are ready to cook, slice a hole in the chicken and stuff with your cheese mixture. Bake until the chicken is roasted and cooked thoroughly. This chicken was so flavorful we felt it did not need salt or pepper but of course you could season your chicken a bit more.

Not Your Average Chili

Hello Blog and Bloggers,

It has been too long. In the past couple months we have baked, chopped, sautéed, steamed, roasted, and fried; savory, sweet, satisfying meals.

Recently, we moved into a place with a beautifully open kitchen...


Together we have decided to cook more and eat out less. So to start, we emptied out the fridge and pantry, looked at what we had and decided to make chili.


We had onion, yellow and green bell pepper and, basil.


I know what you are thinking, these are not chili beans, what you should pay attention to is the fire roasted tomatoes, they make a difference.


Mix it all together with some ground beef and all the random seasonings you have. Let it sit for a few hours then enjoy!

It did not have the tomato sauce taste or texture of regular chili but it was still surprisingly delicious.
