Tiny Little Sandwiches




These are real quick and easy but so delicious. From Trader Joes we bought the pre made wine country chicken salad with cranberries and pecans. Added a couple slices of avocados and some lettuce, put it all together on some toasty rolls and they are ready to eat!

Sunday Night Dinner

Mostacholi with Vodka Sauce

This recipe is very highly recommended. It was delicious.


Chop us some onions and put them in a whole lot of butter and a whole lot of oil.

Chop up thick sliced pancetta.

Add chicken cut to bite size pieces and lightly brown  it. Then add the heavy whipping cream, pancetta, olives, and parsley. Let the sauce thicken up and add the noodles. Enjoy.

2 Years

Last week was our two year anniversay. To celebrate we went to a very nice dinner at Lashers Restaurant in Long Beach. I had the roasted chicken and Phil had the braised short ribs with au gratin potatoes. The also have award winning clam chowder which was amazing.  


For the entertainment of the night we went to a new club that opened up Downtown Long Beach, Harvelle's. They had a great band playing, The Delgado Brothers.




It was a very fun night!

Quick and Easy Taco Salad

Tonight was a super easy and quick taco salad dinner that turned out delicious!



Chop some onion and green bellpepper to put in with the ground turkey meat.



Add your seasonings. We did salt, pepper, cayenne pepper, and a little bit of pepper flakes.



Grade your cheese. Get your chips and salsa ready... 


And Enjoy your Taco Salad!! Yum!

Roasted Tomato Feta Scones


These are Phil's favorite scones. I found this recipe on Savory Sweet Life, http://savorysweetlife.com/2011/05/roasted-tomato-feta-scones/


Last weekend I made them for our friends and they were a hit!

Ingredients
  • 2 cups all-purpose flour
  • 1 Tablespoon baking powder
  • 1/2 Teaspoon garlic salt
  • 4 Tablespoons cold unsalted butter, cut into cubes
  • 3/4 cup heavy cream
  • 1slightly beaten egg 
  • 1 – 4 oz package feta cheese
  • 1/4 cup roasted red tomatoes, chopped
  •  2 green onions, finely sliced
Instructions
  1. Preheat oven to 400 degrees. Place the flour, baking powder, and garlic salt in a bowl. You can add the butter and use a food processor but I don't have one so, I cut the butter into pea size chunks throw them in the bowl and mix with my hands.  
  2. Stir in heavy cream and egg. Mix the dough by hand until it comes together. Add feta cheese, roasted tomatoes, and green onions. Gently mix the ingredients by hand until ingredients is evenly distributed.
  3. On a floured surface, form a big dough ball. Flatten the dough into a 1 inch disk and cut it in 8 equal pieces. Bake for 15 minutes on a baking sheet. Remove scones from baking sheet and cool on a wire rack.

Sunday Dinner - Gumbo!!

A few weeks ago Phil and I took a trip to New Orleans, LA. http://dreamsinreality.us/ While we were there we tried every authentic southern dish we could, one being gumbo. From our trip we bought back a gumbo seasoning package.


Combine chicken stock, water, sausage and seasoning. We also added a little onion, green bell pepper and mushrooms. Let simmer for an hour or two. Gumbo is traditionaly server over rice but we used quinoa. Add a splash of hot sauce and its ready to eat!

Turkey Burger with Sweet Potato Fries

Tonight we are making lettuce wrapped turkey burgers with sweet potato fries. 


First for the sweet potatoes cut off edges, roughly peel.
Tip: cover garbage disposal with a paper towel for easy cleanup of the scraps.

Next cut potatoes to french fry size, put in large Ziploc bag, pour Extra Virgin Olive Oil in bag and mix around until fries are evenly coated. Place on a large baking sheet and sprinkle with salt, pepper, and cinnamon. Bake at 400 degrees for 40 mins. or until desired crunchiness.

For our turkey burgers we bought Jenny – O pre made and seasoned turkey burgers and cooked on a George Forman Grill topped with either sharp cheddar, pepper jack cheese, or both! Once the cheese is melted, top with favorite toppings; ketchup, mustard, tomatoes, pickles, avocados… wrap in iceberg lettuce.
